Description

A delicious and nutritious dish featuring roasted sweet potatoes and quinoa. This hearty and wholesome recipe is packed with plant-based protein, fiber, and vitamins, making it a perfect meal for vegans, vegetarians, or anyone looking for a healthy and satisfying dish.

Ingredients

Scale
  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup quinoa, rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 cups vegetable broth or water
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta (optional for non-vegans)
  • 2 tablespoons tahini sauce (optional)
  • 1/4 cup pomegranate seeds (optional garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C).
  2. Roast the sweet potatoes: On a baking sheet, toss the cubed sweet potatoes with olive oil, cumin, smoked paprika, cinnamon, salt, and pepper. Spread them out evenly and roast for 25-30 minutes, flipping halfway through, until tender and slightly caramelized.
  3. Cook the quinoa: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed. Fluff with a fork.
  4. Assemble the dish: In a large bowl, combine the cooked quinoa with the roasted sweet potatoes. Add chopped parsley, and stir to combine.
  5. Optional toppings: If using, drizzle with tahini sauce, sprinkle with crumbled feta, and garnish with pomegranate seeds for extra flavor and texture.
  6. Serve: Enjoy warm as a main or side dish.
