Ingredients
- 4 whole wheat or gluten-free English muffins (split in half)
- 1 cup of tomato sauce or pizza sauce (low-sodium preferred)
- 1 ½ cups shredded mozzarella cheese (or dairy-free alternatives)
- ½ cup pepperoni slices (optional)
- 1 cup of chopped vegetables (bell peppers, onions, mushrooms, spinach, etc.)
- 1 tsp dried oregano or Italian seasoning
- 1 tbsp olive oil (optional, for brushing the muffins)
Instructions
Prepare the Muffins: Preheat your oven to 375°F (190°C). Split the English muffins in half and lay them out on a baking sheet lined with parchment paper. Optionally, brush the cut sides with olive oil for extra crispiness.
Spread the Sauce: Use a spoon to spread about 2 tablespoons of tomato or pizza sauce on each muffin half.
Add Cheese and Toppings: Sprinkle a generous layer of shredded mozzarella cheese over the sauce. Add your desired toppings, like pepperoni or veggies.
Season: Lightly sprinkle oregano or Italian seasoning over the pizzas for added flavor.
Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, and the muffins are crispy.
Serve: Let the pizzas cool for a couple of minutes before serving.
