Description

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 small flour tortillas
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp chopped cilantro (optional)
  • Salsa, sour cream, or guacamole (for dipping)

Instructions

  • Prep the Chicken: In a medium-sized bowl, combine the shredded chicken with chili powder, cumin, garlic powder, paprika, salt, and pepper. Mix well until the chicken is evenly coated with the spices.
  • Assemble Quesadillas: Lay out the tortillas and sprinkle an even layer of cheddar and mozzarella cheese on half of each tortilla. Add a layer of seasoned chicken on top of the cheese. Optionally, sprinkle cilantro for added flavor.
  • Cook the Quesadillas: Fold the tortillas in half and gently press them down. Heat olive oil in a large skillet over medium heat. Place the folded quesadillas in the skillet and cook for 2-3 minutes on each side or until golden brown and the cheese is melted.
  • Serve: Cut each mini quesadilla into triangles and serve with salsa, sour cream, or guacamole for dipping.
