  • 1 lb (450g) boneless, skinless chicken breasts, cubed
  • 2 tbsp butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1/2 cup celery, chopped
  • 1/4 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 cup milk or heavy cream
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1 package (2 sheets) refrigerated pie crusts, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Cook the Chicken: In a large skillet, melt the butter over medium heat. Add the cubed chicken and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  • Sauté the Vegetables: In the same skillet, add the onion, garlic, carrots, celery, and cook until softened, about 4-5 minutes. Stir in the flour and cook for 1 minute.
  • Make the Sauce: Gradually stir in the chicken broth and milk, and whisk until the sauce thickens, about 3-4 minutes. Add the peas, corn, thyme, and cooked chicken back to the skillet. Season with salt and pepper.
  • Assemble the Pie: Roll out one of the pie crusts and place it in a 9-inch pie dish. Pour the chicken and vegetable mixture into the crust. Roll out the second pie crust and place it over the filling. Crimp the edges to seal and cut a few slits on top to vent.
  • Bake the Pie: Brush the top with the beaten egg. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
  • Cool and Serve: Let the pie cool for 10 minutes before serving.
