  • For the Shrimp:

    • 1 lb shrimp, peeled and deveined
    • 2 tbsp olive oil
    • 2 cloves garlic, minced
    • 2 tbsp lime juice
    • 1 tsp chili powder
    • Salt and pepper to taste
  • For the Mango Salsa:

    • 1 large mango, diced
    • 1 red bell pepper, diced
    • ¼ cup red onion, finely diced
    • 2 tbsp cilantro, chopped
    • 1 jalapeño, seeded and minced
    • 2 tbsp lime juice
    • Salt and pepper to taste

Instructions

  • Marinate the Shrimp:
    In a bowl, combine olive oil, minced garlic, lime juice, chili powder, salt, and pepper. Toss the shrimp in this mixture until they are evenly coated. Let the shrimp marinate for 10-15 minutes.

  • Prepare the Mango Salsa:
    While the shrimp is marinating, in a large bowl, combine diced mango, red bell pepper, red onion, cilantro, jalapeño, and lime juice. Stir everything together and season with salt and pepper to taste. Set the salsa aside to let the flavors meld.

  • Grill the Shrimp:
    Preheat your grill to medium-high heat. Thread the shrimp onto skewers, making sure they are evenly spaced. Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque. Be careful not to overcook.

  • Assemble and Serve:
    Remove the shrimp from the skewers and arrange them on a platter. Serve the grilled shrimp alongside the mango salsa, or spoon the salsa over the shrimp for a beautiful presentation. Garnish with additional cilantro and lime wedges if desired.
