  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 8 cups fresh spinach
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  • Prepare the Chicken:
    • Preheat the grill to medium-high heat.
    • In a small bowl, mix 1 tablespoon of olive oil, minced garlic, paprika, salt, and pepper.
    • Rub the mixture over both sides of the chicken breasts.
  • Grill the Chicken:
    • Grill the chicken for 5-7 minutes on each side, or until fully cooked (internal temperature of 165°F / 74°C).
    • Remove from the grill and let it rest for 5 minutes.
  • Sauté the Spinach:
    • Heat the remaining olive oil in a large skillet over medium heat.
    • Add the fresh spinach, garlic, lemon juice, and red pepper flakes.
    • Sauté for 3-4 minutes, until the spinach is wilted.
    • Season with salt and pepper to taste.
  • Serve:
    • Plate the grilled chicken and serve with a side of sautéed spinach.
