- 2 tablespoons olive oil, divided
- 2 garlic cloves, minced
- 1 teaspoon paprika
- Salt and pepper, to taste
- 8 cups fresh spinach
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Prepare the Chicken:
- Preheat the grill to medium-high heat.
- In a small bowl, mix 1 tablespoon of olive oil, minced garlic, paprika, salt, and pepper.
- Rub the mixture over both sides of the chicken breasts.
- Grill the Chicken:
- Grill the chicken for 5-7 minutes on each side, or until fully cooked (internal temperature of 165°F / 74°C).
- Remove from the grill and let it rest for 5 minutes.
- Sauté the Spinach:
- Heat the remaining olive oil in a large skillet over medium heat.
- Add the fresh spinach, garlic, lemon juice, and red pepper flakes.
- Sauté for 3-4 minutes, until the spinach is wilted.
- Season with salt and pepper to taste.
- Serve:
- Plate the grilled chicken and serve with a side of sautéed spinach.
