Instructions
- Boil the Eggs: Place the eggs in a saucepan and cover them with water. Bring to a boil over medium-high heat. Once boiling, turn off the heat, cover the pan, and let the eggs sit for 10-12 minutes.
- Cool the Eggs: Drain the hot water and run cold water over the eggs to cool them. Peel the eggs once they are cool enough to handle.
- Prepare the Filling: Slice the eggs in half lengthwise. Carefully remove the yolks and place them in a small bowl. Mash the yolks with a fork until smooth.
- Mix the Filling: Add mayonnaise, Dijon mustard, vinegar (or lemon juice), salt, and pepper to the mashed yolks. Mix until smooth and creamy.
- Fill the Eggs: Spoon or pipe the yolk mixture back into the egg white halves.
- Garnish and Serve: Sprinkle paprika over the top and garnish with chopped chives or parsley, if desired. Serve immediately or refrigerate until ready to serve.
