- 1/2 cup corn kernels
- 1/4 cup soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1/2 teaspoon red pepper flakes (optional)
- 2 green onions, sliced for garnish
- Sesame seeds for garnish
Instructions
- Prepare the cauliflower rice: Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Set aside.
- Sauté the vegetables: Heat olive oil in a large skillet over medium heat. Add the onion, bell pepper, and carrots. Stir-fry for 3-4 minutes until slightly softened.
- Add the garlic and ginger: Add the minced garlic, grated ginger, and snap peas. Cook for another 2-3 minutes, stirring frequently.
- Cook the cauliflower rice: Add the cauliflower rice to the skillet along with the soy sauce, sesame oil, and red pepper flakes (if using). Stir everything together and cook for 5-6 minutes, until the cauliflower is tender but not mushy.
- Serve: Remove from heat and garnish with sliced green onions and sesame seeds. Serve warm.
