  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 carrot, julienned
  • 1 cup snap peas, trimmed
  • 1/2 cup corn kernels
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced for garnish
  • Sesame seeds for garnish

Instructions

  • Prepare the cauliflower rice: Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Set aside.
  • Sauté the vegetables: Heat olive oil in a large skillet over medium heat. Add the onion, bell pepper, and carrots. Stir-fry for 3-4 minutes until slightly softened.
  • Add the garlic and ginger: Add the minced garlic, grated ginger, and snap peas. Cook for another 2-3 minutes, stirring frequently.
  • Cook the cauliflower rice: Add the cauliflower rice to the skillet along with the soy sauce, sesame oil, and red pepper flakes (if using). Stir everything together and cook for 5-6 minutes, until the cauliflower is tender but not mushy.
  • Serve: Remove from heat and garnish with sliced green onions and sesame seeds. Serve warm.
